I bought a 25 pound bag of carrots and have been looking for new ways to use carrots. I wasn't expecting too much from this carrot raisin salad, but OH MY GOD! I see this becoming a staple in my diet. It's so simple to make and only uses a few ingredients.If you keep a jar of the almonnaise in the fridge (it's DELISH!) then the only things you need to do are grate up some carrots and chop up some celery. I used a veggie peeler to grate the carrots, but on second thought a mandolin would work much better. I tried a grater but it didn't work too well, it was too hard to grip the carrot while sliding it up and down. I had an easier time with the peeler.
All you do is mix up grated carrots, chopped celery, raisins, and the almonnaise (see below). That's all I did. Adjust how much of everything to add based on your own likes. Raw food is creative. 
Almonnaise
- ½ cup raw almonds
- About ½ to cup water
- 1 tsp nutritional yeast (I use a rather big scoop)
- 2 garlic cloves
- Some shakes of seasoning (I used 21 Seasonings)
- Little bit of oil
- 3 tbs lemon juice, or 1 lime
- 1 tsp apple cider vinegar
Simply put the almonds into the food processor until they turn crumby then add in everything else and process until smooth.
