Celery & Salsa

Looking for a healthy vegan snack or appetizer? Celery is a wonderful raw substitute for chips and has that nice shovel effect to easily scoop up your favorite dip.

Serves 2-3

Items Needed for Preperation:

  • Blender or (preferably) a Food Processor
  • Cutting knife
  • Cereal sized bowl

Ingredients:

  • celery sticks
  • 2 good sized tomatoes
  • 1 carrot
  • 2 handfuls of your favorite greens (I used some spinach and romaine lettuce)
  • 1/4 cup of chopped onion
  • 1/4 cup of chopped bell pepper
  • Half of an avocado (optional)
  • 1 garlic clove, minced
  • Spices, and hot sauce to taste

Directions:

Step 1: Chop up the tomatoes, onion and bell pepper to your desired sizes and throw half into the food processor. Put the other half into a bowl with the avocado and mush them together.

Step 2: Put the WHOLE carrot into the food processor. (If you use a blender it may have a rough time because it's so chunky, cutting it into smaller pieces will help a lot. If you're having problems put in a dash of water or lime juice, give it a good stir and start it up again. Note: you don't want to add too much water and make it a soup).

Step 3: Once its all blended up, put the mixture in the bowl with the diced veggies. Add your favorite spices and garlic to kick it up a notch! (I used black pepper, marjoram, and some hot sauce) and now its ready for you to munch. Enjoy!
