Easy Guacamole

Guacamole is one of my favorite snacks. My hispanic friend let me in on her secret to amazing guacamole. It's simple: lot's of lime and lots of cilantro. And man was she right! No need to worry about herbs and spices, just the cilantro and lime!

If you want some protein, black beans taste awesome in guacamole!

I love adding loads of veggies like bell pepper, onions, and tomatoes. If you want to eat the guac raw you can use celery, carrot sticks, or cucumber slices to shovel that yummy dip into your mouth. Raw veggies contain all their natural enzymes that aid in digestion without being salted and fried in fat! Although not in the picture, my favorite scoopers are cucumbers!

This easy guacamole recipe will have you buying avocados nonstop! Who doesn't love something that's easy to make, nutritious, and amazingly tasty?!

Serves 2-4

Items needed for preparation:

  • Cutting knife
  • Medium sized bowl

Ingredients:

  • 2 large avocados
  • 1/2 cup of bell pepper
  • 1/2 cup of tomato
  • 1/2 cup of onion
  • 1/2 cup of cilantro
  • 3/4 - 1 cup of black beans (optional if you want some protein, the only cooked ingredient)
  • 1/4- 1/3 cup lime (or lemon juice if it's your only option)
  • Celery (or carrots) to scoop
  • Black pepper and hot sauce to taste (you can use one-two medium sized jalapeños instead, but I'm a sucker for hot sauce. )

Directions:

Step 1: Chop the avocado into small pieces and throw into a bowl. Some people like to take the extra effort to make sure the avocados are mushed into a purée, but I don't see the point in it.

Step 2: Chop all the veggies into your preferred size and combine with the lime juice and avocado. Add the beans if you're using them.

Step 3: I prefer celery because it's nice and crunchy and you don't have to do anything to it, but if you're using carrots cut them into sticks for easy scooping. The best way I have found for this is to stab the tip of the knife into the carrot, then push the rest of the knife down to cut off a thin slice of carrot.

Step 4: Add black pepper and hot sauce to taste.
