Yummy Healthy Blueberry Muffins
These healthy blueberry muffins are THE yummiest muffins I have ever had the privilege of tasting! Made with all natural ingredients that leave them moist and delightful. These healthy blueberry muffins make a great breakfast or snack.
I'll let you in on a little secret, for every recipe that calls for egg, I either use my homemade applesauce, or banana's mixed with some fresh squeezed orange juice. They add extra all natural sweetness so you can reduce the amount of sugar! "Egg replacers" just doesn't sound right to me. And forget about butter, ewww, fermented juice from a cow's titty definitely doesn't sound good to me either. Oil is natural and tastes just as good.
You came to the right place my friends! Here is all the steps you need for the ultimate healthy blueberry muffins!
Items needed for preperation:
- Mixing bowl
- Muffin pan
- 2 cups whole wheat flour
- 1/3 cup oil
- 1/3 cup of agave
- 3/4 cup orange juice
- 1 tbsp baking powder
- 1/2 cup almond/hemp/soy/rice
- 1 banana
- 1 1/2 cups blueberries
Step 1: Preheat the oven to 350.
Step 2: Grease the muffin pan (don't forget to grease! I have a habit of forgetting ).
Step 3: In a large bowl mush the banana. Add the orange juice, oil, and your favorite vegan milk (almond milk for me please!).
Step 4: Mix the sugar and baking powder in with the wet ingredients. Then slowly stir in the flour.
Step 5: Mix in the blueberries, try not to mush them too much. (If you have frozen berries just defrost them in warm water).
Step 6: Spoon your muffin extravaganza into the muffin tray, filling each cup about 2/3 full.
Step 7: Bake for 10 minutes. Remove the muffins from the oven and sprinkle cinnamon on top of each of them for a yummy spice! Plop them back into the oven for an additional 10-15 minutes, or until a toothpick comes out clean after inserted into the center of a muffin. After you let them cool for about 10 minutes, your fluffy healthy blueberry muffins are ready for you to enjoy! Leaving you feeling great for the rest of the day!
