Moist Healthy Bran Muffin Recipe
This healthy bran muffin recipe produces the most AMAZING muffins, it is the basis for my other muffin recipes. I took a regular bran muffin recipe, and replaced all the unhealthy ingredients like refined sugar, milk, butter, and eggs with all natural ingredients like honey, almond milk (tastes so much better!), applesauce, and banana.
I was shocked at how incredible they were when I took the first bite! People think they need to put in all this fat and sugar in it recipes to make their food taste good. But when you use applesauce instead of eggs, honey or agave instead of sugar, and almond milk instead of cow's milk, they taste much better, as well as nice and light on the tummy. The preparation is so easy!
I recommend whole wheat flour, white flour is NOT good for you. How can something that is bleached be good for you?
Items needed for preperation:
- Mixing bowl
- Muffin pan
- 1 1/2 cups whole wheat flour
- 1 cup wheat bran
- 1/2 cup chopped walnuts (optional, although highly recommended)
- 1/2 cup raisins (optional, although highly recommended)
- 1 tsp grated orange peel (packed down semi-firmly)
- 2 1/4 cup almond milk/hemp/soy/rice
- 1/3 cup raw honey or agave
- 1 cup applesauce
- 1 banana
- 1 1/2 tbsp of baking powder
- 1/2 tbsp of baking soda
Preheat the oven to 350 and grease the muffin pan. In a bowl mush the banana and add the applesauce, honey or agave (to help the honey come out more easily of whatever measuring utensil your using, layer it with oil first to help it slide right out), and your favorite vegan milk.
Next mix in the baking powder, baking soda, orange peel, walnuts and raisins. Slowly mix in the bran and flour.
Spoon your yummy, bran muffin mix into the muffin tray, filling each cup about 2/3 full. Bake for 25-35 minutes or until a toothpick comes out clean once inserted into the center of a muffin. Let them cool for about 10 minutes, and your about to taste the best healthy bran muffins you've ever had!
