Hummus is my all time favorite dip for 3 reasons; 1.) it's so healthy, loaded with fiber, protein, and spices to help digestion, 2.) I love spices and adding lots of them to my hummus. 3.) Hummus goes good with EVERYTHING!
Hummus is an exotic blend of pureed chickpeas, lemon or lime, sesame tahini, oil, and spices with added flavors such as garlic, red peppers, scallion and dill. It is used as a dip for pita bread (one my favorite snacks), crackers, or fresh veggies. It also makes a great spread (instead of high-cholesterol mayonnaise) for sandwiches.
In 1200 AD Mediterranean countries listed hummus as a staple in their diet. You can customize it whichever way you want, adding your favorite spices. Any spices taste great with chickpeas. Here is my classic hummus recipe:
Items needed for preparation:
- Food processor, or blender
- Big bowl
- 1 cup dried chickpeas, or 2 cups cooked
- 1/4 cup chickpea juice
- 1 lime, or 2 tbsp lemon/lime juice
- 1 red bell pepper
- 1 tbsp cayenne pepper
- 6-10 cloves of garlic (depending on your love for garlic)
- 1/4 cup tahini
- 1/4 minced onion
- Your favorite spices to taste (I used parsley, marjoram, cloves, and basil)
Step 1: Put the chickpeas, chickpea juice, bell pepper, lime/lemon juice, and garlic in the food processor/blender. I like to add the onions chopped for that tasty CRUNCH.
Step 2: Pour everything in a bowl; add tahini, onion, spices and mix together. Voila! Your own middle eastern vibe right in your house.
