Sweet Colorful Salad with Homemade Dressing

If you are looking for a healthy dinner recipe, try this quick, colorful salad. It also can be a great lunch all by itself if served over a bed of greens. Place the following ingredients in a medium size bowl: 2 cups of diced fresh tomatoes, 1 cup of diced heart of palm, ½ cup of chopped purple onion, 1 small can of corn, 1 can of black beans (rinsed and drained), 1 cup of firm fresh mango (if available), and ¼ cup chopped cilantro.

In a small bowl whisk together the following ingredients to make a dressing: 2tbsp lime juice, 2 tbsp red wine vinegar, 4 tbsp olive oil, 2 tbsp honey, 1 tsp ground cumin, 1 tsp Dijon mustard, and ground black pepper to taste. Pour dressing over the salad and toss to mix. This keeps well in the fridge for a few days, and is an easy, colorful side dish.
