Sweet Mung Bean Sprout Salad

Things You’ll Need:

  • Mung Bean (green bean) Sprouts
  • 1 cup Pomegranate seeds
  • ½ cup Grated Coconut
  • 1 tbsp Green Chilli
  • Mustard
  • 1 tsp Asafoetida
  • ¼ tsp Sunflower Oil
  • 1 tsp Lemon or Lime Juice

    Method: In a large bowl mix sprouts, pomegranate seeds and grated coconut. Heat a pan with 1 tsp oil, add mustard, asafoetida and green chilli, allow it to splutter. Switch off the flame and add it to the salad. Add salt and lime juice and toss the salad well. Now your colourful salad is ready to serve.

    Facts: Adding mustard and asafoetida balances the gas caused by Mung sprouts. A very good salad for expecting and feeding mothers, as it helps in protein intake and lactation.
