Moist n' Healthy Vegan Pancakes

Mmmm! Pancakes don't get much healthier OR tastier than this! There's no need for eggs or milk. I could eat these everyday for the rest of my life. When I made these healthy vegan pancakes for two of my omnivorous roommates they said it was the best pancakes they've ever had. That may be a common phrase, but they wouldn't stop saying it! Seriously, these pancakes are the bomb.Makes 8 Items needed for preperation: - Griddle/ pan
- Mixing bowl
- Whisk
- Ladle
Ingredients: - 1 1/2 cups orange juice
- 1 tsp baking soda
- 1 tsp baking powder
- 1/2 cup applesauce
- 1/2 cup water
- 2 cups whole wheat flour
- 1 banana
- 1/4 cup of bran (optional)
- tsp vanilla (optional)
- 1/3 cup chopped walnuts
- 1/3 cup (c)raisins
- 1 tbsp oil
Directions: Step 1: Grease your pan/griddle and turn onto medium heat. Its good to have a hot pan ready so they cook at a good pace. Step 2: In a bowl mush the banana with the orange juice, apple sauce, vanilla, oil, water, baking powder, and baking soda. Step 3: Mix in flour, and bran with the wet ingredients. Add (c)raisins, and chopped walnuts. Step 4: Ladle your pancake extravaganza onto your heating device (a ladle-full makes the perfect size pancake). The only maple syrup I've been able to find is always so processed. So instead of using maple syrup I love to top it off with my favorite jelly and a little bit of agave. It tastes just as good if not better!
