Wheat and Spinach Pancake

by Mary
(England)

Ingredients:
1. Wheat flour - 1 cup
2. Salt to taste
3. Baking powder – a pinch.
4. Water – 1 cup
5. Spinach - 200 grams
6. Onion – 1 (chopped)
7. Tomato – 1 (chopped)
8. Green Chilly - 1 (chopped)
9. Coriander leaves – 10 grams (chopped)
10. Oil for cooking – 1 teaspoon

Preparation: Mix the ingredients 1-4 well to make a thick dough for the pancake. Let the dough sit for a half hour. Put the spinach in boiling water for 3 minutes, then drain the water completely and chop it up. Mix the chopped spinach, onion, tomato, green chilly and coriander leaves with a pinch of salt and keep aside.

Heat a pan and spread the dough on the pan to make a cake (thickness should be half a centimeter). Immediately after spreading the dough, put the mixture of the spinach on the top of the dough until the dough is fully covered with spinach mixture. Cook for 2 minutes on low heat with the lid on. Pour a little oil on the top and cook the other side for two minutes on low fire. Now, your wheat and spinach pancake is ready to eat! It is low calorie, very healthy, and rich in fibers and vitamins.
