Moist Healthy Banana Muffins

Bananas are my favorite fruit and are prefect for just about everything, smoothies, sorbet, egg substitute, anything with nut butter, and they taste GREAT by themselves!

These moist healthy banana muffins are a great way to start out your day! They're nice and light without all those icky unnatural ingredients that leave your tummy feeling bloated. This is such an easy preparation that only takes 10 minutes of your time.

Items needed for preperation:

  • Mixing bowl
  • Muffin pan
  • Whisk


  • 3 bananas
  • 2 tbsp baking powder
  • 1/4 cup agave or honey
  • 1/2 cup orange juice
  • 1/2 cup soy/rice/almond milk
  • 2 cups whole wheat flour
  • 1/4 cup oil
  • 1 cup crumbled walnuts (optional, although highly recommended)


Preheat your oven to 325 and grease the muffin pan. I don't think you're going to want those puppies to stick and loose muffinage that could be in your mouth!

In a bowl mush the bananas, I use a food processor but a potato masher or your hands will get the job done just as well! Add orange juice, vegan milk, oil, and baking powder. Mix it up nice and good!

Add the agave or honey. Good honey is almost like glue, so to help it out of your measuring cup put a layer of oil before measuring it out. This helps it come out smoothly.

Gradually stir in the flour, and mix your banana extravaganza thoroughly. If you're using walnuts chop them up and add 'em to your yummy healthy banana muffins.

Spoon the muffin mix into the tray filling each cup about 2/3 full. Cook them for 30-40 min, or until a toothpick comes out clean when inserted to the center of a muffin. Let them cool for 10 min, and your tastebuds are in for a surprise!

Banana muffins are a great snack, too! Double the recipe and you'll be snacking on these delicious muffins all week long! Yeah right! They probably won't even last two days.
