Moist Healthy Zucchini Bread Recipe

I've noticed a lot of recipes say that they're "healthy" but they still use eggs, milk, and refined sugar. You absolutely do NOT need eggs, cow's milk or refined sugar for a tasty recipe! I would put this healthy zucchini bread recipe against any other recipe, "healthy" or not. The less animal foods you eat, the more you realize how bad they make you feel after eating them.

Although I've been using all natural ingredients in all my food, whenever I eat something with dairy (usually that my old roommate would make) my liver hurts. It feels so amazing to eat all natural ingredients. And it's so easy! I'm glad you landed on my recipe. This natural zucchini bread tastes so sweet and is absolutely scrumptious!

Serves 8-10

Items needed for preparation:

  • Bread pan
  • Whisk
  • 2 mixing bowls
  • Flour sifter


  • 1/2 cup oil
  • 2 cups whole wheat flour
  • 1 1/2 cups grated zucchini
  • 1/2 cup applesauce
  • 1/2 cup agave, or 1/3 cup honey
  • 1 tbsp cinnamon
  • 1/2 cup chopped walnuts
  • 1/2 cup raisins or cranberries
  • 1 tsp vanilla
  • 1 tsp baking powder
  • 1 tsp baking soda

Note: homemade applesauce tastes so much better than what you'll find at the store. And you can be sure there's no added sugar or other poisons you do not want. With a food processor you can make your own applesauce at any time! You can also make 100% banana ice cream!!!


Preheat the oven to 375 and grease the bread pan with oil. Virgin olive or coconut oil is the best! Sift the whole wheat flour 2-3 times to help it rise.

Grate the zucchini with a cheese grater and add to the flour. In a separate bowl mix applesauce, oil, cinnamon, vanilla, zucchini and sweetener of your choice. Stir in the sifted flour. Add some chopped walnuts and raisins if desired (you're missing out if you don't!).

Next, spoon the zucchini medley into the bread pan. Cook for 50 minutes or until a knife or toothpick inserted into the middle comes out clean.
