Vegan Potato Salad Recipe
Most potato salads contain mayonnaise and hard boiled eggs. No way would I ever put eggs and mayo in any of my foods. Not for the love of animal reasons but for health reasons. They just don't contain any nutrients and make me feel horrible afterwards. My favorite ingredient to add to just about every dinner/lunch recipe is cilantro! It adds the best all natural fresh taste to everything it's in, especially in guacamole.
I love this vegan potato salad recipe it fills me up nicely, potatoes do a good job at keeping me full. This potato salad can also be used a great side dish. For the dressing I used Balsamic Vinaigrette and it topped it off amazingly. Feel free to use whatever dressing suits you, I'm sure anything would make it taste delicious.
- 2 potatoes
- 2 medium sized tomatoes chopped
- 1 cup chopped bell pepper
- 1 cup chopped onion
- 1/2 cucumber sliced in 1/4's
- 2 cloves minced garlic
- 3/4 cup cilantro
- 1 tbsp black pepper
- 1 tbsp parsley
- 1 tbsp of my favorite seasoning
- desired amount of balsamic vinaigrette
Poke holes in the potatoes and boil until a fork inserted offers no resistance. Once they're soft cool them off with cold water. Cut into small sizes and put into a bowl.
Add all the chopped veggies and spices and mix. Add your favorite salad dressing and your about to taste the best potato salad your ever going to eat!
