Here's an easy salad recipe I like to make that doesn't use any green vegetables.
Cucumber - 2 Onion - 2, Tomato - 2, Salt - as required, Lemon Juice - 1 tbsp
Peel the small cucumber and cut them round. (Note from Healthy-Soul: the peel of the cucumbers is the healthiest part, I like to leave them on). Cut onions and tomatoes also in round shape. Mix the lemon juice and salt with the salad and mix well.
