Fresh n' Easy Veggie Tacos
I love tacos with corn tortillas, I don't know what it is but they got me hypnotized on their flavor. Flour tortillas don't appeal to me one bit, they just don't have as bold of a taste compared to corn. One night when I had the 3 am munchies I was craving tacos but didn't want to eat too crazy before I go to bed and have it turn into crap. So I made up fresh n' easy veggie tacos. I love chunks of veggies topped with a little hot sauce wrapped in a corn tortilla. It's pretty damn delicious! Or you can use your favorite salad dressing as a topping instead of hot sauce.
- Corn tortillas
- 1/2 bell pepper
- 2 tomatoes
- 2 chopped celery sticks
- 2 cloves of garlic
- 1/2 cup minced onion
- Bell pepper to taste
- 1/2 cup chopped cucumber
- Beans of your choice (optional)
Step 1: It's important to heat corn tortillas so they don't rip. I usually heat mine on top of the flame on medium heat for about 30 seconds each side, or until it gets a couple bubbles.
Step 2: Chop up your veggies into desired shapes and sizes and enjoy your fresh tacos!
